Yummy dessert

Last time we were at Trader Joe's we grabbed some of these mini meringues. I worked out the points and it was 3 points for 4 of them.

So tonight I had a great idea to make a mock pavlova type dessert with them.

Here is what I used:


Mini meringues
Fat Free whipped cream
fruit (I used strawberries and kiwi fruit)

I was able to use 3 meringues for only 2 points and 1 cup of the Reddi Wip was 1 point.

I broke up the meringues:


Then I added the Reddi Wip and mixed it up. Then chopped up the fruit and put it on top. 


And that's it. A delicious 3 point dessert! YUM!

19/2 Food

More food =P

Billy worked really late last night and for some reason I couldn't sleep so we both got up fairly late. And we had go into town so I skipped breakfast! Terrible I know!

So when we got home I was STARVING! At Food Lion I picked up some cubed steak which is very lean and quite small so I fried up a piece in 1 tsp oil and garlic. Then a huge salad with balsamic.


I haven't had much red meat lately but it was good! I bought a couple of small packs and froze them individually as Billy isn't a big fan and neither is Ashley. Here is a close-up of my yummy salad. 


It's baby spinach, arugula (rocket), baby lettuce, persian cucumber and celery. Normally there would be more vegies in it but I didn't have all of the usual ones.

I didn't photograph dinner, which was Udon Soup and smoked turkey. Then after dinner I had some very yummy strawberries and pineapple.


And I had one of these!!


Sooo good! And only 3 points. I still have 13 points left tonight!

Day 02- The meaning behind your Blog name


Well it's not too complicated really. I am originally from Australia and I moved to the USA in October 2008 with my husband who is from here and my son and it was mainly just a way to tell everyone how it was going and share stuff with family and friends. 


I told you it wasn't exciting!

Day 1

Day 01- A recent picture of you and 15 interesting facts about yourself



This was taken before heading out to dinner for our anniversary on the 1oth. 15 interesting facts! Wow. I don't think I am very interesting. Well here goes.

  1. I have lived in every state of Australia except Tasmania. Sadly I was very young for most of them so I don't remember much about all the places we lived.
  2. I have taken care of myself since age 15. I have worked for most of my life since then. The time here in the USA is the longest I haven't worked in my entire life.
  3. I am very logical. I can see logic in most things. It drives most people crazy.
  4. I rarely freak out about stuff. I am good in a crisis.
  5. I want to have another baby so badly I cry about it nearly every night when I am alone.
  6. My spine is so damaged that I am scared one day it will be so bad I won't be able to walk.
  7. I am hilarious. I am great with snappy comebacks, one liners and can make a roomful of people be in stitches. 
  8. I can strike up a conversation with anyone and regularly do it.
  9. I am afraid of losing my accent. 
  10. I used to want to be a Japanese Chef. I took Japanese for 3 years and did commercial cooking in school. I love Japanese food but sadly it is very hard to find around here.
  11. I was a tomboy most of my childhood and teenage years. It wasn't until recently I started liking girly things and now my favourite colour is pink!
  12. I love shoes. Especially boots. If I could I would wear boots everyday.
  13. I also love skirts and dresses. I can't wait to lose this weight and wear pretty clothes again.
  14. My husband is my favourite person in the entire world. He never annoys me, I never tire of being with him. I could sit and listen to him for hours. I absolutely adore him and I hate it when he is at work.
  15. If they existed I would love to be a Vampire.

More food

All I seem to blog about at the moment is food or weight loss! I am sorry if this is boring but I am planning on doing a feature a day about people in my life, so stay tuned.

Back to the food.

When we went to Trader Joe's this past week I picked up some Sun-dried Tomato and Basil Chicken Sausages. I had one yesterday in a whole wheat bun with grilled onions. It was delicious!


I liked it so much I had 2 today with salad. There are a bunch of other flavours which I am looking forward to trying. Here is my lunch today:


Last night's dinner was something I had been wanting to make in a long time. When I was young and mum still ate seafood she would make fish with lemon juice and celery seeds and I remember I used to LOVE it! Well last night I attempted it for the first time and it was so yummy! And it was a big hit with the men of the house too! I also baked sweet potatoes, steamed broccoli & brussel sprouts and pan fried mushroom and cherry tomatoes with olive oil and garlic. 


I have always loved cooking, I mean I wanted to be a chef growing up. But here recently I have loved it even more. I have enjoyed using such fresh and healthy ingredients which I have missed so much living here. Trader Joe's has been such a blessing to me and my healthy lifestyle change. 

My body and the scales are feeling the positive affects!

4th weigh-in

Another pound down!! I was not expecting a loss at all! I didn't go off plan at all but I used my weekly points for the first time and thought the scales would suffer from it. But I still lost! I was so stoked!

I am REALLY hoping to get to my 10lb loss next week. I will need to lose 1.8lb this week. It's doable, considering how I have been losing. If I get it I will also get my 5% star!!

I am so proud of myself and how well I am doing. My 35th birthday is in a little over a month and I am excited to see how much I can lose by then.

More food

I keep taking photos of things I am eating etc to blog about then forget to do it. So here they are!


One of my favourite fast food items. It's the Chargrilled Chicken Sandwich from Chick-fil-a. It's only 6 points which is fantastic! It comes with a packet of Honey Roasted BBQ sauce which is DELICIOUS! It's 2 points extra but sooo worth it.

Sushi

Mmmm sushi! Billy & I got a pack each from Trader Joe's. Mine was Brown Rice Crabmeat rolls. They weren't too bad. I would have preferred fresh sushi, but for packaged sushi it was ok. I really need to get back into making my own. I am pretty good at it.


My favourite breakfast! Kashi Golean cereal with banana and soy milk (photo is before I added the milk). It's got a bunch of protein and keeps me satisfied for hours!

And of course I have to have a cup of Earl Grey tea with it!

Weightloss update


I haven't updated about Weight Watchers for a few weeks so I thought I had better. I have been doing really well on it. This is probably the most focussed I have been on Weight Watchers in the whole time I have ever done it. I have 100% support from Billy and being home during the day helps with food choices and time to prepare etc.

I am loving all the healthy food. Salad and fruit and yogurt and lean meat. I feel better, my skin has been better and I am losing weight.

I have lost every week so far. First weigh-in I lost 3.2lbs, second week I lost 1.4lbs, third 2.6lbs. 7.2 lbs in total (3.2kg). My clothes fit better and my jeans are even starting to get loose.

My friend Andrea took me down to check out Trader Joe's. I am in love! It's a store that sells organic, healthy foods. Their fruits and vegetables are so fresh and the selection is fantastic!


Here is a bunch of stuff Billy & I got this week. I have switched over to soy milk aswell, I love it in cereal! I am also eating english muffins instead of bread as they have less sugar and calories. I eat a big bowl of salad at least once a day.

How it began

So I had no idea what to blog about here lately and one of my friends on Facebook, Cyndi, suggested I write about how I got into photography.

Well I have always loved taking photos. For as long as I remember I have owned a camera in some shape or form.

When I really started getting interested in it for more than family snapshots was in about 2001 or so when my BF at the time got me my very first digital camera for Christmas. It was a Dolphin Jazz 2MP camera and at the time very cool! Here are some photos taken with it:

Not fantastic but for a fairly cheap camera it didn't do too bad. I had it for quite a few years before I upgraded to a Fujifilm Finepix S5600. I got that in 2006 and I loved it so much! Here are some photos from it:

I mainly used my camera to take photos of outings eg: to the beach or of special events. Then a friend of mine online, Donna, blogged about a 365 Project she was doing on Flickr where you take a self portrait every day for a year. I loved looking at hers and others photos and started getting more and more interested in photography. I wanted to always have a camera with me, but my Fuji was big and bulky. So in 2008 I got a Canon IXUS 1100SD camera that was small enough to fit in my bag or pocket. Here are some photos I took with it:

I LOVE this little camera! It takes such good photos for such a tiny thing. I still used it a lot. I started taking photos of everything and always had it with me. But then I started seeing the amazing photos on Flickr taken with DSLR cameras and the amazing versatility they seemed to have.

So when we moved to the USA I had some money from selling all of my things and bought a Canon Rebel XSi (450D) and that is when the love affair with photography REALLY took off. I have 3 lenses now and they are just so much fun to play with.

I have taken literally thousands of photos of the past few years. The numbers on my XSi have cycled through twice already! I love photography and I really need to get back into it more again. I have kind of lost my mojo.
