Steel cut oats

A few people have asked me how I make my steel cut oats and I have seen other people saying they don't have the time to make it every morning. So I am going to share what I do to save time.

Basically I start with these:

You can get them pretty much anywhere that sells oatmeal. Steel cut oats are just oats that aren't rolled out. They have a chewy consistency which I prefer over rolled oats.

I make 8 servings at a time. I measure out 320g which is 8 x 40g servings. I weigh it out on my digital scales after zeroing off the bowl.

Then I bring 7 cups of water to boil. The instructions are 1 cup of water to 1 cup of oats, but I like mine a little undercooked. I'm weird like that! But you can use the 8 cups if you like.

I add the oats, let them boil for about 5 minutes then I lower the temperature so they simmer for another 20 minutes or until all the water is gone and it's at a consistency I like.

Then I dump it all back into the bowl again and weigh it.

Because I didn't zero off the bowl this time, I just take off the weight of the bowl, in this case it's 155g, then I divide the remaining number by 8. Which works out to 180g. Leaving a 5g buffer I weigh out each portion into small containers.

I freeze 6 portions and leave 2 in the fridge for the next 2 mornings.

When I want one in the morning, I just take it out of the freezer, run some hot water over the container to loosen it. Then put into a bowl and microwave for 2 minutes, stir, then another 30 seconds. Then I add my fruit, nuts, milk etc.

Some of my favourite topping combinations are:

banana, honey & walnuts
PB2 & banana
Chocolate PB2 & banana
dried cranberries and slivered almonds
pumpkin butter and slivered almonds.
blueberries and peaches

The choices are really endless.

Total - 307 calories

3 TJ's turkey meatballs - 150 calories
brussel sprouts - 56 calories
165g mashed potato - 119 calories
14g light butter - 54 calories
7g bacon bits - 30 calories
1/4 cup turkey gravy - 25 calories
baby carrots - 12 calories

Total - 446 calories

Snacks:

70g Berry medley - 40 calories
110g 0% fat plain greek yogurt - 60 calories

Total - 100 calories

Water:

8 cups / 67.6oz I downloaded a funky app where I can keep track of my water! It lets me know how much I need for my body weight. I still had 306ml left but I didn't count my coffee this morning! ;)

Last 2 weigh-ins

Forgot to post my weigh-in last week! Oops! Well here is is:

I gained 1.6lb :( Then Thanksgiving came and I gained even more. Going up to around 158.8lb this past weekend.

But I got back on track and really stuck with it the past couple of days and this morning I weighed in at:

So slowly getting back down there again. I REALLY want to get under 150 at least by Christmas. Fingers crossed I can!

The Ugly Truth

Ok so here recently a couple of people have said to me that they think I look great at the weight that I am and that I don't need to lose anymore weight.

Well see most of these people are only going by photos I share on Facebook or on here. I tend not to post unflattering photos, because I mean honestly who does!?

BUT I need to put this out there because I need it to be known that I am not happy where I am right now.

Parades, turkey & a long walk

Happy Thanksgiving everyone!! Gobble gobble gobble!!

It's been a great couple of days! Yesterday we went to the Salisbury Christmas Parade. I got all dressed up:

Excuse the photo, Billy took it and he thought it was ok but it was way over exposed so this is the best I could do with it. I need to teach that boy!

We managed to get a pretty good spot, although it was cold and my back was KILLING me after while of standing in one place on concrete for over an hour. But it really was worth it for Ashley. Sadly all the photos I took of Ashley were blurry :( but I got a bunch of the parade.

It was a great parade and I took over 300 photos but I won't bore you with them all, these are just the ones I thought were worth sharing.

We then came home and snuggled up with some soup and watched Sherlock. Our new favourite show! LOVE IT!! (The UK one, not Robert Downey Jr). I made pumpkin muffins for our Thanksgiving lunch with the family.

Then Ashley & I got up early this morning and watched the Macy's Thanksgiving parade. Then we all got dressed to head out to the in-laws for FOOD!

My 1 and only plate

After all the food and family time we had to head home so Billy could get some sleep before heading into work. And I had a 5k to walk!!

So he got into bed and I got into my workout clothes. I decided the best approach was to walking 1 direction away from home, that way I couldn't wuss out halfway through and go inside. So I headed out to the main road and just walked.

It was kind of scary because the cars go pretty past and you have to go off the road where it drops off and it's all uneven and you can twist your ankle! But I soldiered on!

I was SO proud of myself! I actually had tears welling up toward the end of it, because this is pretty big for me!

And you know what. It wasn't that hard!
