Thankful Day 1

So most people know that November is the month of Thanksgiving and that a lot of people use this as an opportunity to post things they are thankful for, whether it's once a week or every day. I have decided to do a thankful post every day if possible.

Now of course I am very thankful for the big things. Like my son, my husband, my family, friends, my job, a roof over our head etc. But I want this to be about the little things every day that make me thankful.

Today I am thankful for:

Hazelnut sugar free coffee creamer - it makes my mornings just a little bit better :)

"The Way We Move" - Langhorne Slim - I listen to this at least twice a day in the car and it just makes me so happy!! Love it!

Getting a great park at work so I didn't have to walk far in the rain.

The fact it stopped raining before I finished work.

The squirrel who was sitting on the side of the road as I drove by. Too cute.

All the people who said they loved my accent today.

The lady who said I sounded like I was from Boston. That made me laugh!!

The pair of J-Lo sunglasses I got at Kohls for $3 on clearance!!

I am going to incorporate photos into these posts too but I left this one so late that I won't worry about that tonight!!

What's in my bag?

This is one of those internet things that has been around for years! And I love it! I have done it a few times on Flickr and once on Instagram over the years and decided to do a blog post about it.

Here are a few of my past years ones:


My first one ever, April 2008. I adore that bag. My sister gave it to me for Christmas and it was from the company she was a buyer for and it's so soft and gorgeous!!

August 2008. My pink phase! lol I was a little obsessed with pink! I still am a little bit but nowhere near as bad!

And here is what I carry around in my bag now:

I like to change my bags depending on my outfit and it was always a pain to change everything over into each bag so a while ago I came up with a system. I found these little bags to keep certains things in and I just move the bags over to each bag. I use clear ones so I can see what's in them. For my "feminine" stuff I used to have a black one but my lovely friend sent me a gift in the mail this week in that cute while bag so now that is my "girly stuff" bag :D

So I have one that is like a first aid type bag, bandaids, medicine etc. Then other one that is more beauty type stuff.

Another one for pens etc. I don't smoke but a lighter is always handy. The scissors come in handy all the time too! The top 2 are my purses. The tan one is my main one and the black one is for Reward cards, change etc.

Yep. Not cool. I am pretty unhappy with myself BUT I will not allow it to freak out. I am getting back on this damn wagon. I was 147lb a month ago dammit!

So anyway. I am back on track as of today. Plus I am also in the job market! Eeeeek! Wish me luck!

Transformation Tuesday

It's been a while since I posted so I thought posting something inspirational would be good. And this is not just to inspire others. It's for me too. Because I have been terrible here lately. Like REAL BAD!

My eating is off the chart and I haven't been to the gym in months. I am hoping things will change this week and I am able to get back on the wagon. A lot of it has been things that are out of my control but hoping to get some of that control back.

I remember when that before photo was taken. It was Thanksgiving and I thought I looked nice. But now seeing the photos I know looked bad. It wasn't long after this that I decided to join Weight Watchers. And thank god I did! It has truly changed my life.

Now I just need to get back on track and get back down to my WW goal so I can go back to meetings again and then get to my personal goal.

Vegan food!

So mum is here! She got here on the 29th and since picking her up I haven't eaten any animal products except for 1 baby bell cheese. She has been making the YUMMIEST dinners! All vegan!

Here are some of the stuff she has been making with vague recipes as she doesn't measure anything, she just goes by instinct. Plus other things we have been eating.

Roasted veggies with chick peas:

Blue corn tortilla chips with kalamata hummus & red pepper hummus with veggies etc:

Rice Dream vegan ice cream, DELICIOUS!

Tofu cooked in coconut oil, soy sauce, sweet chilli sauce, garlic. Salad with kale, arugula, mushrooms, tomatoes, chick peas, carrot and avocado. Dressing made with lime juice (fresh), coconut oil, black pepper, herbs etc

Chick pea and vegetable curry - veggies & chick peas. Curry sauce - coconut cream, curry paste, coconut oil, red onion. Sauté onion in coconut oil, add curry paste, cook for a few minutes, add coconut cream, simmer for a few minutes then add veggies, then add chick peas at the end. Serve with brown rice.

Falafel from Trader Joe's with quinoa salad and tahini sauce.

Vegan enchiladas/burritos: whole wheat tortillas filled with refried beans, tomatoes, red onions, taco seasoning, potatoes. Topped with salsa and "cheese sauce" made with soy milk, corn flour and nutritional yeast. We used the fine nutritional yeast not the flakes. Topped with guacamole.

Weigh in & Food diary 22/04

Anyway, I have been really bad here lately so I need to do this to have accountability. I weighed in this morning:

Creamy mushroom chicken:

Chicken tenderloins fried with spray oil, then out in oven to keep warm. saute mushrooms on same pan until brown, add sour cream, then add chicken. Serve when warmed through.

My serving - 250 calories

2 tsp canola oil - 80 calories
butternut squash - 20 calories
asparagus - 16 calories

Total - 362 calories

Weigh-in 18th March

So my goal this week was to get below 150lb. Last week I weighed in at 150.1lb so it wasn't a huge goal. But I really wanted to be below 150 before my birthday. And guess what!!!

YAY!! I am so freakin happy!!!!!

I only have like 4lb or so before I am back at my WW goal! And even less before I can go back to meetings. Wooohooo!!

Hubby cuddled up with me on the couch after dinner before leaving for work and Ashley helped me clean up after dinner without being asked. Love my men :)

Catch up post

I know it's been a while since I posted on here so I am going to do a big long catch up post. I apologise if it's really long :)


So the last time I posted my weight was back in late January and it was 150.6lb. Since then I have really been kicking up the exercise now that I can get to the gym everyday. And my weight has fluctuated between 150 - 154lb. My eating has been pretty much spot on, with only a few bad days. I upped my calories a couple of weeks ago after not seeing any change with my weight and also have decided to change my weigh in day to Monday mornings, as I take the weekend off from the gym so that is the ideal time for minimal water weight from sore muscles etc. So this morning was my first weigh in on the new weigh in schedule and I was at:

Now only a few days ago in the fitness group I am part of I posted that I really wanted to be under 150 by my birthday which is in 11 days. At the time I was hovering around 152lb and wasn't sure if I would be able to do it. Well holy heck! I am so close now! My weight last Monday (yes I weigh myself everyday and record it) was 150.5, then it gradually went up all week. Then after 2 days rest from working out it's down again. So I am convinced it's the Body Pump that is causing my temporary weight gains. Wish my birthday wasn't a Friday! Lol

My eating has been spot on too. The last day I didn't track or went over my calories was the 1st March.


This is something I have been so proud of! Since getting my license I was able to start going to the YMCA. I was very blessed to be approved for a reduced membership as part of their open door program. I love them! So I have been going at least 3 days a week, trying for 5.

I do Body Pump on Monday, Wednesday and Fridays. It's a weight class with an aerobic aspect to it also. I wear my HRM and I burn between 300-350 calories each class! It's hard! On the other days I have been doing Body Flow, which is a mix of Yoga, Pilates and Tai Chi. That is hard too but feels wonderful and so good for my posture. I also jump on the treadmill here and there, which I need to do more often. Plus I want to use more of the machines in the gym.

I can feel and see the changes happening in my body already. Billy is freaking out, in a good way, about how my body is changing too. It's awesome. Plus it has done wonders for my moods. I am happy all the time now. It's so crazy!


Things have been great, as usual with Billy & Ash. Billy has had the past few days off and it's been great. We got to hang out with friends yesterday and saw Oz the Great & Powerful. I got to wear my latest thrift store find top and new bargain shoes and my newish black skinnies.

The movie was really good and afterwards we all went and sat at Starbucks and just talked for hours! It was great!!

Then we got hungry and went and got some sushi with a Groupon we got for a place we hadn't tried yet.

We had to go to Walmart and grab a couple of things so we decided to stop at Sweet Frog afterwards. I even weighed mine and worked out the calories. I got the fat free Irish Mint with choc chips and a peppermint patty.

It was a great day! And I was within my calories too! Win win!

Fusia Noodles from Aldi

A few months ago I was shopping at Aldi and came across these. I was intrigued as I love Asian noodles so I thought I would give them a go. They come in a few different flavours: Teriyaki, Roasted peanut and Soy ginger. They were no more than $2 a box.

The calories aren't too bad especially when I make up 4 servings instead of the suggested 3 on the box.

And no weird, unnatural ingredients!!

What I do is steam a whole bunch of veggies like broccoli, carrots etc. Then I cooked some chicken breast tenderloins then put it aside, then saute some onion in the same pan. I boil the noodles then add them and the steamed veggies to the chicken and onions, mix in the sauce and viola! Yummy healthy dinner!!

So I haven't been blogging much at all here lately and I feel bad about that but I don't really know what to blog about other than food dairies and those can get a tad tedious. So I came across this meme on the Sunday Stealing blog. Basically they find quizs on other blogs and post them. Well they found a HUGE one and I thought it might be cool to do it on here as a way for my readers to get to know me. Here is part 1:

1. Who are you? Um Nikki? Lol I'm a mother and wife. 

2. What are the 3 most important things everyone should know about you?
I'm a dork. I cry at everything. And I am very honest.

3. When you aren't doing memes like this one what are you doing?
Playing online, going to the gym, hanging with my family. Taking photos.

4. List your classes in school from the ones you like the most to the ones you like the least (or if you are out of school, think of the classes you did like and didn't like at the time).
English, Japanese, Cooking, Geography, Typing, Computers, Science

5. What is your biggest goal for this year?
To get fit and toned

Out of debt as much as possible and hopefully in a nicer home.

Happily married with an adult son.

Probably both at certain times.

The closest was a Body Combat class at the gym like 11 years ago.

It's been steadily getting better. I might not have all the material things I would like to have but I have a wonderful little family that brings me a lot of joy.

It certain circumstances. 

14. How do you handle a rainy day?
Stay in and snuggle up. Unless I have to go out, then I just go.

15. Which is worse...losing your luggage or having to sort out tangled holiday lights?
Losing your luggage most definitely! I like untangling lights! It's fun!

16. How is (or was) your relationship with your parents?
I don't speak to my father. I love my mum! 

17. Do you tend to be aware of what is going on around you?
YES! I am very aware! I see and hear things most people miss. 

18. What is the truest thing that you know?
How much I love my husband.

19. What did you want to be when you grew up?
A couple of things. A chef was the most series one. I also wanted to be in the medical field, more research than anything.

Many times.

21. Are you more of a giver or a taker?
More of a giver. 

22. Do you make your decisions with an open heart/mind?
Most of the time, it does depend on what it is though.

23. What is the most physically painful thing that has ever happened to you?
Kidney stones, then childbirth.

24. What is the most emotionally painful thing that has ever happened to you?
There are some I won't speak about but the one I will is when I had to get back on the plane when I was visiting my now hubby for the first time. Leaving him was one of the hardest things I have ever done.

My hubby and son.

Ham egg cups

So I have been seeing things like this all over the net and I have been meaning to try them out. Well last week I made a batch and really liked them so I tweaked it a little this week and made another batch.

I use Quick eggs from Trader Joe's which is just egg whites that are coloured yellow. But you can use whole eggs or plain egg whites, it's up to you. I don't eat too many yolks because of my cholesterol.

1 1/4 cup Quick eggs (or 6 eggs)
6 thin slices ham or any other lunch meat
finely chopped onion & red bell pepper (only a small amount)
spray oil
salt & pepper to taste.

Preheat oven to 350. Spray your muffin tray, I use the 6 muffin one so I don't make too many. Then line with the ham.

Sauté the onions and bell peppers in a non stick pan with a small amount of spray oil.

Pour eggs into cups making sure its inside the ham. If some leaks out, it's fine as the spray oil won't allow it to stick. Leave room to add veggies. Then top up if needed. Add salt and pepper to taste.

Other things you can add: chopped up mushrooms, cheese, chives, tomato. The choices are endless!

Bake in oven for 25 minutes or until egg is cooked through. You can eat them hot or cold! Mine worked out to be 40 calories each.
